Fried green tomatoes. Have you ever had them before? The best I've ever eaten is at The Lady & Sons in Savannah.
I got some green tomatoes from the CSA this week. Although I would love to have fried them à la Paula Deen or the WhistleStop Café, I'm afraid the waistline just can't take it. I decided to "oven-fry" or bake them instead. I am sure this is sacrilegious to Southerners everywhere, but hey... you gotta do what you gotta do.
Slice the tomatoes uniformly to about 3/8" thickness, then coat them. I had some leftover Baking Miracle from my pre-locavore, pre-organic life, and I'm not gonna lie— I used it, mixed with some grated parmesan cheese, salt and pepper.
Bake the tomatoes in a 400-degree oven for 10 minutes, then flip them and top them with some grated cheese. I think local farmer's cheese would be excellent, but all I had was some grated Asiago on hand. Bake for 8 more minutes, and voilà!
I topped my tomatoes with some organic black bean and corn salsa. YUM!
